I've been at my new job for just over a month now and because I also work with my boyfriend and they have a crazy cake obsession there, he mentioned I am 'fabulous' at making cupcakes (not sure I'd use that word) so I thought I'd treat them and make them some of my 'famous' cupcakes.
Everytime I make cupcakes I go all out in making them good, this is key for me!
So this time round I made some Unicorn Cupcakes which I think turned out amazing, taste pretty yummy too and they certainly was too good not to share with you all.
The Unicorn Cupcakes have sprinkles all over the top of the buttercream icing as well as on the inside to. The buttercream frosting has 4 different colours - Purple, Yellow, Orange and Mint Green.
As well as the Unicorn Cupcakes I made these 2-Swirl Cupcakes which I normally make for my family and friends. For final touches I like to sprinkle some white chocolate stars all over the cupcakes.
The 2-Swirl Cupcakes doesn't have sprinkles on the inside but still have the yummy buttercream icing.
110g/4oz butter or margarine, softened at room temperature
110g/4oz caster sugar
2 free-range eggs, lightly beaten
1 tsp vanilla extract or any other flavourings
110g/4oz self-raising flour
1-2 tbsp milk
For the buttercream icing
140g/5oz butter, softened
280g/10oz icing sugar
1-2 tbsp milk
